Happy Family Birds on the hatching (Steam quail eggs with minced meat & prawns)-Perfect for Reunion Chinese New Year. Ingredients: -(A) 4 shrimps -(B) 10 quail eggs -(C) 200g minced pork, 200g shrimps, 6 mushroom, 6 water chestnuts, carrot (All finely chop) -(D) 300g Chye Sim vegetable, 120g Brown Shimeji , shredded carrot, flower carrot shape. (Black sesame seed for eyes & carrot for mouth). Seasonings: Salt, pepper, corn starch, light soy sauce, Oil Sauce: Stock, Oyster sauce, salt, corn starch Method: -4 shell shrimps leaving the tails intact, cut along the back without cutting through, set aside. -Marinate the ingredients (C) with some salt, pepper, light soy sauce and corn starch. Stir well and leave it for a while. (Divide into 4 portions) -Boiled quail eggs and peel off the shell. -Blanch ingredients (D) into boiling water with salt and oil. Once cooked, arrange on plate and set aside. -Take 1 shrimp and wrap with 1 portion of the marinated meat. Shape into the shape of the bird. Gently press 1 quail egg on the filing with some corn starch. Then place black sesame seed for eyes and carrot for mouth. -Arrange all the 4 birds on a steaming plate, steam over medium heat until cooked. -Pour stock into heated wok, add oyster sauce, salt, corn starch and mix well.
